SOME OF THE FOLKS WHO MAKE IT HAPPEN…
DAVID & MICHELLE SARRAF // Owners
David moved back to Los Angeles in 1997 after attending the University of Wyoming. It was then that he started a small independent snack line company called NakedNuts.
Around the same time, Michelle graduated from USC and was quickly hired as a senior buyer at the 99 Cent Only Store Corporate office, and their story began. They met during a sales visit and quickly bonded over their passion for growing a category of quality products in discount retail.
Over the next few years, they got married, started a family, and continued to grow both David’s business and Michelle’s career in food retail.
In 2012, David expanded his business by purchasing an existing company called Snacks R Us that solely distributed snack food items in Southern California to all of the major grocery chains.
David and Michelle had always dreamed of owning a cafe where they could cater to the people and thrive in a new community. When the opportunity to acquire McCall’s Meat and Fish presented itself in October 2020, the two quickly realized that this was their dream come true. Their goal was to continue delivering top quality meat and fish while expanding the produce, retail and special programming aspects of the business, all while keeping customer service at a superior level.
AUDREY GREWE // Director of Operations
Audrey was born and raised in Middlebury, Indiana where her father Randy owned a historic meat shop & smokehouse called Old Hoosier Meats. Audrey grew up behind the meat counter- spending many afternoons after school at Old Hoosier where she’d work the cash register & wrap up endless packages of burgers & brats.
In 2014, Audrey attended The University of Notre Dame where she studied Film, Mathematics, & Philosophy. After working in film marketing for several years, Audrey googled “meat shop jobs LA” only to find that McCall’s Meat & Fish Co. posted a job listing the day prior. In her 4 years years with the company, Audrey has managed both locations, helping to open both the Santa Monica & Atwater Village locations. When not at the shop, Audrey enjoys attending concerts, playing cards, going on hikes, & drinking beers with her friends.
JULIA LOWE // Head of Brand and Marketing
Named after Julia Child, Julia inherited her love of good food from her mom, and further developed her passion while attending university in New Orleans. Having lived in LA for nearly 10 years, she spent time as a photographer, food + beverage buyer, and social media manager, before landing at McCall’s handling all things brand and marketing. Outside of McCall’s, Julia loves to travel, host dinner parties, hit the farmers market, and watch scary movies. She is a painter and spends much of her time exploring LA.
TAYNE MORANO // GM - Atwater Village
Tayne has been in hospitality for over 15 years, working in a range of environments from small dives to Michelin starred restaurants. With his experience coupled with being an avid home cook and food enthusiast, Tayne is able to uniquely tailor every guests’ experience at McCall’s. Outside of work Tayne is a stand up comedian performing regularly at clubs all over Los Angeles. Beyond creating the best possible experience for each guest at McCall’s he also aims to make you smile.
ANTHONY PARETTI // GM - Santa Monica
Due to his Korean and Italian heritage, Anthony has had a passion for cooking from a very young age. Some of his earliest memories involved cooking with his mother and grandmother, learning their ways in the kitchen. While attending the University of San Francisco, where he majored in English Literature and Composition, his passion for food reignited when the world went on lockdown. "There was nothing else to do but cook." He then hosted private dinners with his roommate for friends in the city that pushed him to be creative and learn the architecture of a menu.
In 2022, after needing meats for an event he was cooking for and seeing all that McCall's had to offer, he applied the next day and the rest is history.
Outside of work, Anthony likes to watch sports, particularly ice hockey, hang out with friends, try new restaurants, and cook for others.
DOMINIQUE TROTTIER \\ Assistant GM - Atwater Village
Dominique was born and raised in San Jose, CA and has a BA from UC Santa Cruz where she Sociology and Linguistics. With an impressive resume of management in the service industry, Dominique was brought onto the McCall’s team as AGM in 2022. Dominique has a knack for hospitality and enjoys working in a spot that has so many regulars and familiar faces coming through the doors. When she’s not in the shop, Dom enjoys hanging out with her cat, doing yoga, treating herself to a nice coffee after her weekly cold plunge, and taking it easy.
DANIEL RIVERA \\ Head Butcher - Santa Monica
Daniel is an LA area native with nearly two decades of experience in food service and food retail. After some years in various restaurant front-of-house roles, in 2011 Daniel joined the meat department at Whole Foods where he began to develop a love for protein preparation as well as his knife skills and work ethic. He desired to focus his efforts on attaining a more hands on education in meat and fish fabrication, and in early 2016 joined the crew at McCall's. There, Daniel has worked for and alongside some of the most skilled and accomplished food professionals in Los Angeles, inspiring him to expand his knowledge and skill set. He is thrilled to be part of McCall's expansion westward and always aims to contribute to an elevated culinary experience for our customers.
ERNESTO CHAVARRIA \\ Head Butcher - Atwater Village
Hailing from Fontana, Ernesto has been with McCall’s for 7 years and acts as our head butcher in Atwater Village. He worked in kitchens, both fine dining and casual, before joining the McCall’s team doing sausage and poultry, and eventually moving into his head butcher role. He is a true sculptor of the meats, trimming every steak he touches with an impressive attention to detail that’s hard to come by. When he’s not breaking down whole hogs or coming up with new marinades, Ernie enjoys skateboarding, going to the beach, cooking, and hanging with his pug named Lola.
PATRICK KELLY \\ Cheesemonger
Many moons ago Patrick worked as a fishmonger (in Chicago, his hometown), but a certain “cheese mentor” entered his life to teach him the tricks of the cheese trade — and he’s been a cheese fiend ever since. He’s been with us for about a year and a half now, and customers will most likely know him as the guy with all the cheese samples. Outside of the shop, Patrick plays bass and sings in bands, and is producing a documentary about 90’s alt standup comedy.
JACKSON HUNNEWELL \\ Head Produce Buyer
Jackson started in the prepared foods dept. at McCall’s 4 years ago, but began buying produce for us when the pandemic hit + folks were turning to McCall’s to be more of a one-stop-shop. Over the years, Jackson has grown our produce program into something really special, putting so much time + energy + love into curating a selection that highlights really good stuff that’s grown here in CA. Outside the shop, this Los Feliz native loves to cook, eat, bike, + hang with his friends. His favorite produce items? Well that depends on the season…
